Kale, mainly eaten in the West, is often hailed as “the nutrition powerhouse” and “the queen of greens” due to its antioxidant properties and it being the most nutrition-dense food in the world.
How do you make kale enticing for you and your family as kale has a tough texture and tastes a little bitter?
I like it steamed for about 5 minutes, and then apply this tasty, simple, and healthy miso dressing. Miso, although salty, does not seem to have the same adverse impact on our cardiovascular systems as salt. Given it is fermented, it has lots of antioxidants and minerals as well,
Scoop up a teaspoon of organic miso paste (I like light sodium, white).
Mix well using some water, olive oil, sesame oil, and squeeze some lemon juice over the dressing.
Some people like to beef it up by adding garlic and smashed avocado, which also sounds good to me.
Mix well with your steamed kale. Sprinkle some sesame seeds on top. Delish!
