When you don’t have time to bake a cake, but you want a cool, nice-looking and tasty cake which won’t melt in the sun (at least not right away), what do you do? A watermelon cake! The idea came from Martha Stewart, Veggie Belly demonstrated how-to, and modified it by sprinkling lemon zest and putting mint or basil leaves on top. I might add, sprinkling some sea salt on top of the melon, really brings out the sweet taste. After you scoop up the melon balls, there is the cake itself to be finished! So simple, but tasty, love it!
